Explore how different bread samples respond to compression using a texture analyzer from Universidad Estatal a Distancia in Costa Rica. The laboratory connects the texture of a familiar food with measurable mechanical behavior, giving students real experimental evidence to interpret and compare.
Choose from five samples: white bread, white zero bread, whole wheat bread, whole wheat zero bread and multigrain bread. Practice the instrument’s force and height calibration steps, or proceed directly to observation. Front and perspective camera views show the probe pressing into the selected sample during a recorded compression test.
Examine the force, probe displacement and time data to follow the sample’s response as compression progresses. Compare the shapes of the curves and the maximum recorded force across samples, then download the spreadsheet for plotting, calculations and further analysis. Repeat the activity with other bread types to support comparisons with experimental data.
The activity supports lessons in food science, materials, physics and measurement instrumentation at secondary-school and university level. Teachers can focus on reading graphs and comparing samples, or extend the exercise with quantitative spreadsheet analysis. This is an ultraconcurrent remote laboratory: the videos and measurements come from real, prerecorded experiments, rather than a live test performed on demand.
